Eating healthy is really important to me. I feel better physically and spiritually when I am aware of what I put in my body. When I get home from school it is so easy to reach in the pantry and grab a Cosmic Brownie, and fortunately because of my gluten free diet – I don’t even have the option to have the temptation. In my world, it is totally worth it to spend 10-15 minutes preparing a lovely snack before doing homework, but realistically…that’s unrealistic. I love Siggi’s yogurt, especially with fruit and granola! Duh! Below is the recipe for my mom’s homemade coconut granola – it smells amazing. Enjoy :)


• 2 1/2 cups old-fashioned rolled oats
• 1 cup sliced almonds
• 1 cup unsweetened flaked coconut
• 1/2 cup ground flaxseed (ok to leave whole)
• 1/2 teaspoon sea salt
• 1/2 cup honey
• 1/3 cup coconut butter
• 2 tablespoons coconut oil (measured solid)
• 2 tablespoons unsalted butter
• 2 teaspoons vanilla extract


Preheat oven to 325 degrees F. Line a baking sheet with foil or parchment paper. In a bowl, combine oats, almonds, coconut, flaxseed and salt. Stir well and set aside. Heat in small saucepan or microwave honey, coconut butter, coconut oil, butter, and vanilla extract. Stir until mixture is melted and combined. Remove from heat and stir into oatmeal. Spread evenly on the baking sheet in one layer. Bake for 10 minutes, toss and then bake for 10 minutes more. Toss again, then bake for about 10 more minutes, stirring every 3 minutes or so until the mixture is golden. Remove from the oven and set aside to cool for about an hour. Store in airtight container.
